If you’re dairy free and gluten free you may be missing your Sunday morning breakfast treat. It can be challenging to adapt the ingredients and find the perfect recipe.
Today, let us bring smiles back to Sunday mornings with this simple and delicious recipe. Just a few ingredients but so delicious, light and fluffy that no one will ever know they’re GF and DF.
Ingredients:
3 x eggs, beaten
250g Gluten Free self raising flour, sieved
3Tbsp coconut oil, melted
100g sugar
100ml dairy free milk (Almond/Rice/diluted Coconut)
Optional: Dairy Free dark chocolate chips
Directions:
Mix all ingredients together in a bowl.
Fold in chocolate chips if using.
Heat a large frying pan, lightly coated in oil.
Add 2-3Tbsp at a time into the centre of the pan. Cook over a medium heat until bubbles start to form on the top - then it’s time to flip.
Cook pancakes on both sides until golden brown.
Serve with a drizzle of Maple or some fresh fruit.
Tip: If you’re also egg free, skip the eggs and the sugar, mash in one ripe banana instead - otherwise the measurements remain the same. The outcome is light and fluffy and slightly sweet (see below).
